Cause of T2 Diabetes not what was expected

Part of the lack of understanding of “low carb” diets is that not all carbs are created equal. Fiber is a non-digestible carb that leads to satiety. For example, tonight’s meal was a hand sized portion of wild salmon filet, steamed broccoli, (which tasted wonderfully sweet given how few sweets we consume,) and mashed cauliflower with butter. Pretty healthy meal, IMO, under just about any way of eating. Both of those veggies are high in fiber and low glycemic. Good for keeping you full.

The thing that I find weird is the role of alcohol in weight. Yes, it could just be my weird body, but if I have any alcohol at all, much less calorie wise than what is required to put on a pound, I will put a pound on. Go a day without, and I lose a pound. Per day. As I wear size 8 jeans, that’s not nothing. Probably related to inflammation and water retention, somehow. That said, my body does react in weird ways to a variety of consumables and meds. That’s another reason to stay healthy, as I am never quite sure what the "cure’ for what ails me is going to be good for me.

FWIW,
