Apparently green beans have been dyed to make them appetizing. Now the dyes are removed.
When vegetables like green beans or broccoli are frozen, the routine is to blanche them in boiling water for a few minutes to kill enzymes that otherwise cause deterioration. This causes the vegetables to turn bright green.
It’s possible frozen vegetables are naturally green and don’t require dying. We shall see what changes with the new rules.
