Thermal Conductivity is the rate at which heat will be transferred through the metal. On Cast Iron, they have a thermal conductivity of 52 (W/m K). While carbon steel has a thermal conductivity of 54 (W/m K). On 2 units, in real world performance, you wont see any difference.

CI cleanup was mostly wipe and put away. YMMV

A little late to the thread…

The key to eggs in the cast iron is let the pan heat up, turn it down a bit, then add the oil. Hot pan, cold oil. Use plenty of oil. We’ve been trained to think that oil is bad, but it isn’t and it won’t make your eggs greasy if you cook the eggs properly.

However, the best pan to cook eggs, especially fried eggs, is a wok. Same kind of principle, but you get the soft center with cripsy edges. Its the way to go, in my opinion.

Do you need a gas stove for cast iron?

I use cast iron on electric stove. No problems.

I avoid all non-stick and ceramic because of health reasons.
