While carbon steel has a thermal conductivity of 54 (W/m K). On 2 units, in real world performance, you wont see any difference.
The key to eggs in the cast iron is let the pan heat up, turn it down a bit, then add the oil. Hot pan, cold oil. Use plenty of oil. We’ve been trained to think that oil is bad, but it isn’t and it won’t make your eggs greasy if you cook the eggs properly.
However, the best pan to cook eggs, especially fried eggs, is a wok. Same kind of principle, but you get the soft center with cripsy edges. Its the way to go, in my opinion.
