Of course, if you slather a sauce to make vegetables palatable, you often are adding unhealthy stuff. Butter and fats, etc. Or so I’m led to believe.
Led to believe by people who don’t recognize that fats aren’t a single universe. There are good fats and bad fats. We should stay away from the bad ones—butter from grain-fed cows, all of the fake butters, hydrogenated fats, processed olive oil, processed coconut oil. They’re all inflammatory. Butter from pastured cows, first cold-pressed olive oil, unprocessed organic coconut oil…anti-inflammatory. Good for us.
