This discussion got me poking around. One thing I learned is that many phones that use eSims can have more than one - and so have more than one number. Home and work, for example. Or one for where you are from, and one for where you are visiting. For an unlocked phone they need not be the same carrier.
Going back a bit… For at least some carriers Mexico and Canada are treated very differently than other places like Europe. My plan supports my phone in both places, within some limits.
